perfect set for one of those lazy days. oversized sweater, comfortable sneakers and a beanie. it makes you feel so comfortable, that you can fall asleep at ease haha i'm a little bit sick of seeing new balance shoes, so i decided to get reebok sneakers. once again: thank you, amazing internet.
this is a little bit a "bargain" set - almost everything was bought for really small money. and it should be like that, i guess.
fall is here for good. together with: watching movies and reading books under your quilt. the only advantages of this time of the year.
and i don't know what's going on with this elbow thing.

non-baked cake with the coconut-raspberry top
1 package of digestive cookies (you probably will need about 3/4 of it)
1 cup of cream of wheat (not prepared of course. it was hard for me to find translation for this one)
3 Tbs of cocoa powder
sweetener of your choice (i use brown sugar)
1 liter of non-dairy milk of your choice or water
1/2 cup of shredded coconut
for the top:
1 can of coconut milk
raspberries (you need to decide how much of them you want to use)
4 tsp of agar-agar powder
put digestive cookies at the bottom of a circular baking pan (one layer). In the empty space between cookies put some crushed cookies, so the whole bottom is covered with cookies.
put milk/water in the pot and start heating it on the stove. add shredded coconut and cocoa powder. add as much sweetener as you like (i use about 4 Tbs) - don't forget to try the whole mixture. stir it from time to time. when it starts to boil, lower the heat and start adding cream of wheat in batches, stirring after each one (preferably with a beater). taste it, because it becomes a little less sweet, so you may want to add a little bit of sweetener. stir it all the time. when it becomes to set, take it off the stove and pour over digestive cookies. put it in the cold place to chill (not in the fridge of course).
time for the top.
put the coconut milk, sugar and raspberries in the blender and make a smoothie of it haha
put the mixture in the pot and make it boil. add agar powder and stir well. take the mixture off the stove and pour over the cocoa layer, but be careful - raspberry-agar mixture can drip through the baking pan. so better wait a moment 'till it begins to set.
when it's chilled enough, put it in the fridge. for few hours or whole night to set.
and i'm sorry for all the mistakes. but i don't really like translating recipes.
